Grilled Oysters with a parmesan, chilli and lemon crumb

Oysters are wonderful both raw and cooked but sometimes it can be hard to know what to do with them. One thing we are aiming to do more of is showcase our beautiful molluscs and pair them with different flavours and toppings that you may not think of doing at home. Oysters are fantastic when they're grilled as they take on an almost smokey flavour and remain meaty and succulent. If you're looking to spice up your regular oysters, then this simple recipe is for you! 

Incidentally, this recipe makes a lot of breadcrumbs up so you can either freeze it in batches or use it on other shellfish such as tiger prawns, lobster or Greenlip mussels. 

Ingredients:

  • 4 slices of white bread 
  • 2 red chillis 
  • 40g grated parmesan 
  • Zest & juice of 2 lemons 
  • Large handful of fresh parsley 
  • Ground black pepper 
  • 2 tbsp extra virgin olive oil 
  • 4 cloves of garlic 

Put all of your ingredients in a food processor and blitz into a crumb. 

Once you have shucked your oysters, top each oyster with a slither of butter to prevent the meat from drying out, then put a generous amount of the  breadcrumbs on each oyster. Grill for 4-5 minutes - you will know when they are cooked as the breadcrumbs will turn a beautiful golden brown and the butter will be bubbling! 

Enjoy these grilled oysters either on their own or serve with a simple salad.
